約在 西元 401~500 年(5 世紀) 的古墳時代,
鍛鐵技術傳入今日的大阪・堺地區。
自平安時代末期以來,
這項技術持續傳承並發展,
後來以刻製煙斗煙管用的「煙草刀」聞名。
由於堺擁有豐富漁場,
江戶時代開始發展出各式料理刀具,
其中 出刃包丁 尤其重要。
時至今日,
堺製刀具已佔日本專業料理人使用率超過 90%,
正是這段歷史演進的成果。

自室町時代起,
歷代刀匠鑑定世家 本阿彌家 的本阿彌光悅,
於《亨保名物帳》中記載:
「世上有三把名刀。」
分別是:
相州五郎入道正宗
粟田口藤四郎吉光
郷右馬允義弘
相傳,大名家若未持有三名刀之一,
便無法維持其大名身分與地位。

江戶時代末期,
居於攝津的刀匠 正國,
一心嚮往郷右馬允義弘的刀風,
卻始終無法企及。
生活困頓之際,
他前往泉州住吉大社參拜,
在那裡看到 三隻烏龜於水中優雅嬉戲 的奇景。

此故事原型出自
1892 年(明治 25 年)

某夜,正國夢見三隻龜在虛空中旋轉,
最終化為白鶴,飛向北陸道。
醒來後,
正國捨棄飲食與睡眠,
全心投入鍛刀。
如水中龜般圓融,
如空中鶴般優雅,
以鎚擊出刀刃——
他終於完成了一把非凡之作。

正國深信,
這把刀已達到郷右馬允的境界。
自此,他以
「郷右馬允義弘」 自稱,
並遷居泉州住吉大社吉方,
專注製刀。
郷右馬允之刀,
自始至終 僅此一家入刀。

第二代 正次
承襲秘法,開始製作泉州傳統 本焼包丁
第三代 博次
於昭和 25 年(1950)
正式將「郷右馬允義弘」
註冊為 山脇刃物製作所代表品牌

本焼包丁、本鍛練包丁 之上。

Iron forging techniques reached present-day Sakai, Osaka during the Kofun period (5th century).
From the late Heian period, these skills were refined and passed down, later becoming famous through the production of tobacco knives.
Blessed with rich fishing grounds, Sakai evolved into a center for professional kitchen knives during the Edo period, with Deba knives playing a vital role.
Today, over 90% of professional Japanese chefs use Sakai-made blades — a result of this long historical evolution.

Recorded by Hon’ami Kōetsu of the Hon’ami appraisal lineage in the Kyōhō Meibutsuchō:
“There are three supreme blades in the world.”
They are:
Masamune of Sōshū
Yoshimitsu of Awataguchi
Gō-Umanosuke Yoshihiro
Legend holds that daimyō families without one of these blades could not maintain their status.

In the late Edo period, a swordsmith named Masakuni in Settsu admired the style of Gō-Umanosuke Yoshihiro, yet could never reach it.
During a time of hardship, he visited Sumiyoshi Taisha Shrine, where he witnessed three turtles gracefully swimming in water — a moment that would change his life.

This legend originates from
“Gekkō Zuihitsu / Inariyama & Kaji” (1892, Meiji 25)
by Ogata Gekkō.

One night, Masakuni dreamed of three turtles spinning in the void, transforming into a white crane and flying toward the Hokuriku region.
Upon waking, he abandoned food and sleep, dedicating himself entirely to forging.
Like turtles in water — rounded and harmonious.
Like a crane in the sky — elegant and refined.
Through relentless hammering, he finally forged a blade beyond the ordinary.

Masakuni believed his blade had reached the realm of Gō-Umanosuke.
He adopted the name “Gō-Umanosuke Yoshihiro”, moved to the auspicious grounds of Sumiyoshi, and devoted his life solely to blade making.
From that point on,
only this lineage bore the name.
━━━━━━━━━━━━━━━━━━━
2nd generation Masatsugu inherited the secret techniques and began producing traditional Senshū-style Honyaki knives
3rd generation Hirotsugu officially registered
“Gō-Umanosuke Yoshihiro”
as the representative brand of Yamawaki Hamono Seisakusho in 1950 (Showa 25)
To this day, the name is engraved only on their Honyaki and true forged blades.
