Founded in 1920 (Taisho 8) by Yoshida Kinkichi in Shimodajima, Sanjo.
Now operated by the fourth generation, Kazutomi Yamamoto.
Sanjo is one of Japan’s historical metal-working capitals, famous for tools, chisels, planes, and blades.
Yoshikane continues its century-long tradition, crafting high-quality handmade kitchen knives.

A single knife goes through dozens of steps—most impossible to fully mechanize:
Forging → Shaping → Heat-treat → Grinding → Handle Fit → Final Finish
Each step is completed by skilled artisans, which is why Yoshikane knives are renowned for their performance and consistency.

Wash with water and sponge → dry immediately
Lightly oil the blade if storing for long periods
Maintain sharpness with a sharpening stone
