此款刀由越前鍛冶名匠 佐治武士 手工打造,使用高性能不鏽粉末鋼 SPG STRIX 作為核心鋼材。該鋼種擁有與碳鋼相仿的可研磨性與鋒利度,同時具備不鏽鋼的耐腐蝕與高硬度特性,是追求實用與美感並重的職人首選。

菜切包丁為方頭設計,專為蔬果處理所打造,能提供俐落的切面與良好的刀感,是日常料理中不可或缺的優秀利器。

⚠ 請勿用於切割冷凍食材、剁骨或重摔(除非使用專門的出刃或剁刀)

This piece is hand-forged by master blacksmith Takeshi Saji in Echizen. It features SPG STRIX powdered stainless steel at its core — a high-performance steel that offers carbon-steel-like grindability and sharpness, while providing stainless steel’s corrosion resistance and high hardness (approx. HRC 65).
Ideal for professionals who value both aesthetics and performance.

The Nakiri is designed with a flat tip and rectangular profile, making it perfect for chopping vegetables with clean, straight cuts and excellent control — an indispensable tool for everyday prep.

📌 Usage & Care Guidelines
⚠ Do not use on frozen items, bones, or apply heavy force (except with dedicated deba or cleavers)
🧼 Wash with water and mild detergent after use, clean gently with a sponge, and dry thoroughly
🛡 For carbon steel knives, apply rust-preventive oil after cleaning
🔪 Maintain sharpness with a whetstone; avoid using pull-through sharpeners
🚫 Do not place in dishwasher or dish dryer
🔥 Avoid exposure to high heat or open flames
💧 Even stainless steel can rust if improperly maintained
