本刀由越前鍛冶名匠 佐治武士 全手工打造,核心鋼材選用高性能不鏽粉末鋼 SPG STRIX,擁有與碳鋼相似的研磨性與鋒利度,並兼具高硬度與優異耐腐蝕性,適合追求實用與美感兼具的專業廚師與愛刀人。

使用與保養注意事項
請勿用於冷凍食材、剁骨或重摔(出刃、剁刀除外)
使用後請以清水與中性洗劑清潔,搭配海綿輕刷,務必徹底擦乾
使用碳鋼刀具時建議上防鏽油保養
建議定期使用磨刀石維護鋒利度,避免使用傳統磨刀器
不可放入洗碗機或烘碗機
避免靠近高溫與火源
不鏽鋼若保養不當,仍可能產生鏽斑

This Santoku is fully handcrafted by master blacksmith Takeshi Saji in Echizen. The core steel, SPG STRIX, is a high-performance powdered stainless steel with sharpening feel and sharpness comparable to carbon steel, while offering superior corrosion resistance and a high hardness of approx. HRC 65.
It is ideal for chefs and knife enthusiasts who seek both practical function and refined craftsmanship.
The Santoku (“three virtues”) is one of the most popular multipurpose Japanese knives, ideal for slicing meat, fish, and vegetables. Balanced and easy to handle, it is a reliable daily-use kitchen essential.

📌 Usage & Care Instructions
⚠ Do not use on frozen food, bones, or for hard impact (except for dedicated deba or cleavers)
🧼 Clean with water and mild detergent, using a soft sponge; dry thoroughly after use
🛡 For carbon steel knives, apply rust-prevention oil regularly
🔪 Maintain sharpness with a whetstone; avoid pull-through sharpeners
🚫 Do not use in dishwasher or dish dryer
🔥 Keep away from high heat and open flames
💧 Stainless steel can still rust if improperly stored or maintained
