🔹 刀匠介紹|眞崎直樹 Naoki Mazaki

眞崎直樹出身於日本北海道,並非刀匠世家出身。

年輕時曾騎著機車環遊日本,在旅途中來到新潟縣三條市,深受當地悠久的鍛造文化吸引,因此決定投身刀匠之路。

2011 年左右進入三條名門「吉金刃物 Yoshikane Hamono」修業,師承吉田恒雄先生,在吉金累積約六年的鍛造、熱處理與研磨經驗。

2017 年獨立創立 Mazaki 工房,成為少數堅持「一人工房」製作模式的日本刀匠之一。

與現代大量分工生產不同,眞崎直樹從鍛造、熱處理、研磨到最終開刃皆親自完成,保留了傳統鍛冶職人的製作精神與高度一致性。

其作品以厚實刀根、極佳遠端漸薄與微凸磨聞名,兼具穩定性與流暢切感,因此深受全球刀具玩家與專業料理人喜愛。

🔹 白二鋼特性

白二鋼 Shirogami #2 是日本傳統高碳鋼中相當經典的鋼材之一,成分純淨,能展現細緻且直接的鋒利感。

相較於青鋼系列,白二鋼的耐磨耗性略低,但磨刀回饋清楚、修復刃口相對容易,因此很適合喜歡自己保養、享受磨刀手感的使用者。

經過良好鍛造與熱處理後,白二鋼能帶來非常乾淨俐落的切削感,也是許多職人與料理人長年喜愛的碳鋼選擇。

👨‍🏭 About the Blacksmith | Naoki Mazaki

Naoki Mazaki is a bladesmith from Hokkaido, Japan, and unlike many traditional craftsmen, he did not come from a family of blacksmiths.

As a young man, he traveled throughout Japan by motorcycle before arriving in Sanjo, Niigata, where he became captivated by the region's centuries-old forging tradition.

Around 2011, he began his apprenticeship at the renowned Yoshikane Hamono, studying under Tsuneo Yoshida. During nearly six years there, he mastered forging, heat treatment, grinding, and sharpening.

In 2017, he established his own workshop, becoming one of the few modern Japanese bladesmiths who continues to produce each knife entirely by himself.

Unlike today's highly specialized production methods, Mazaki personally performs every stage of the process—from forging and heat treatment to grinding and final sharpening.

His knives are renowned for their thick heels, dramatic distal taper, subtle convex geometry, and exceptional cutting performance, making them highly sought after by chefs and collectors around the world.

Shirogami #2 is one of Japan's classic high-carbon steels, prized for its exceptionally pure composition and remarkably clean cutting feel.

Compared with Aogami steels, Shirogami #2 offers slightly lower wear resistance but is considerably easier to sharpen, making it a favorite among chefs who enjoy maintaining their own knives.
