青一鋼(Aogami #1)是在白鋼的基礎上添加鉻(Cr)與鎢(W)等元素,使鋼材具有更優異的耐磨耗性與刃口保持能力。

相較於白鋼,青一鋼能維持鋒利狀態更長時間,因此一直是高階日料刀中相當受歡迎的鋼材之一。

由於硬度較高,磨刀時也需要更好的角度控制與磨刀技巧,因此較適合已有碳鋼刀使用經驗,或願意投入保養的使用者。

🧪 About Aogami #1 Steel

Aogami #1 is produced by adding chromium (Cr) and tungsten (W) to White Paper Steel, resulting in significantly improved wear resistance and edge retention.

Compared to Shirogami (White Steel), Aogami #1 maintains its razor-sharp edge much longer, making it one of the most respected steels for premium Japanese kitchen knives.

Because of its higher hardness, sharpening requires greater control and technique, making it an excellent choice for users who already appreciate carbon steel or are willing to invest in proper maintenance.

High-carbon steel (reactive). Proper cleaning and drying after use are recommended.
